Ginger Spice Cookies

The perfect Christmas cookie! These ginger spice cookies are warm, chewy, and full of cozy holiday flavor. Rich molasses and classic spices create a soft, tender cookie that’s finished with a drizzle of white chocolate and festive sprinkles for the perfect sweet touch.

Soft and chewy molasses ginger spiced cookies drizzled with white chocolate and festive sprinkles. A perfectly unique Christmas cookie.
Equipment
- stand mixer with paddle attachment of a large mixing bowl with electric mixer.
- 3 baking pans lined with parchment paper or silicone pads
- #50 or #60 cookie scoop, 1-1.5 tbsp
- small bowl for melting white chocolate
- piping bag or small plastic bag
Ingredients
- ¾ cup butter softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 egg room temperature
- 2 tsp vanilla extract
- ¼ cup molasses
- 2 ⅓ cup all-purpose flour 300 g
- 1 ¾ tsp baking soda
- 1 tsp ground cinnamon
- 1 ½ tsp ground ginger
- ½ tsp ground cloves
- ¼ tsp salt
- ¼ cup granulated sugar for rolling
- 4 oz white chocolate melted
- sprinkles optional
Instructions
- Gather ingredients. Line 3 baking sheets with parchment paper or silicone baking mats. Preheat the oven to 350 ℉.

- In a stand mixer with the paddle attachment or in a large mixing bowl with an electric hand mixer, cream the butter and sugars until light and fluffy. Add the egg, vanilla and molasses until fully incorporated making sure to scrap the sides as you go.
- Mix in the flour, baking soda, and spices until just combined.
- Using a #50 or #60 cookie scoop, scoop balls of dough, roll in hands and then roll into the granulated sugar. Place on baking sheet 2 inches apart, they will spread. Bake for 10-11 minutes, careful to not let them burn. Remove and cool on pan on a wire rack for about 10 minutes.

- Melt the white chocolate chips in the microwave for 30 seconds at a time, stirring in between, until fully melted. Scoop into a piping or plastic bag and snip off the tip for a very tiny hole.

- Drizzle the cookies with the melted white chocolate, sprinkle with festive sprinkles if you like and enjoy.
