Breakfast Skillet

A one pan baked breakfast skillet made with crispy bacon, seasoned hash browns, and eggs baked until just set. Simple ingredients, minimal prep, and big flavor make this an easy go to for weekends or holiday mornings.

Equipment

  • 9 in cast iron skillet
  • another large skillet to cook the bacon

Ingredients
  

  • 2 cups tater tots, crispy rounds or hash brown patties
  • ½ tbsp seasoning, Lawry's or Red Robin
  • 6 slices bacon, cooked and chopped
  • 6 eggs
  • ½ cup egg whites
  • ½ cup cottage cheese
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup extra sharp cheddar cheese, shredded

Instructions
 

  • Preheat the oven to 400℉. Spray the skillet with cooking oil spray. Add the tater tots to the pan, covering the bottom and sides. Sprinkle with seasoning. Bake for 15 minutes until brown and crispy.
  • While the potatoes bake, cook the bacon in the other large skillet. Set aside on paper towels to cool. Once cooled, chop into pieces.
  • In a large bowl, mix the eggs, egg whites, cottage cheese, salt, and pepper. Mix in half of the cheese and half of the chopped bacon.
  • Remove the potatoes from the oven and mash down the potatoes with a fork. Pour in the egg mixture. Top with the remaining cheese and bacon.
  • Reduce oven to 350℉. Bake for 35 minutes until the center is set. Allow to cool slightly before slicing and serving. Top with sliced green onions as a garnish and hot sauces if you like.
