Homemade pancake mix is the easiest way to keep breakfast stress-free. Just whisk together a few pantry staples and store in a jar so the teens (or adults) can scoop, stir, and flip their own stack of fluffy pancakes. Use the mix as is, or make fun variations like chocolate chip pancakes or cinnamon swirl for a weekend treat.
Mix all ingredients with a whisk in a large bowl. Store in two 3-cup mason jars.
To make pancakes, combine 1 cup of mix with ¾ cup water. Heat butter in a pan. Scoop batter into pan and wait for bubbles to form. Flip to cook other side.
Add chocolate chips if you like before flipping.
Notes
For cinnamon swirl pancakes: Combine 2 tbsp of melted butter, 1 tbsp brown sugar and 1/2 tsp cinnamon. Use a plastic bag to pipe a swirl into the pancake batter before flipping.
