Pork Carnitas

Pork carnitas made in the slow cooker with orange juice and onion are an easy, flavorful dish where the meat becomes tender and juicy before being shredded and crisped up under the broiler.

  • 1 Slow Cooker

Ingredients
  

  • 2 tbsp oil
  • 4 lbs pork shoulder roast
  • 2 tbsp taco seasoning
  • 1 onion peeled and quartered
  • 4 cloves of garlic peel, smashed and left whole
  • 1 navel orange juiced and quartered
  • ½ cup broth (chicken, beef or veggie)

Instructions
 

  • Add the oil to the bottom of the slow cooker. Cover the pork in the 2 tbsp of taco seasoning. Add the onion and garlic.
  • Juice the oranges and add both the juice and the spent peels to the slow cooker. Add in 1/2 cup of broth.

  • Cook on low for 8-10 hours or on high for 4-6. I do high for 6 hours.
  • Shred with two forks.
  • Optional: Transfer shredded pork to a baking pan. Roast under the broiler for 3-5 minutes until crispy.
  • Serve pork with warm corn tortillas, lime wedges, cilantro, queso fresco, rice, beans, guacamole, chips and salsa.
