BBQ Beef

Slow cooker BBQ beef is one of my favorite easy dinners. You just throw it all in and let it cook until the meat is nice and tender with that sweet, smoky BBQ taste. It’s great on buns, in tacos, or over baked potatoes. I usually serve it with roasted sweet potatoes and steamed broccoli for a simple, filling meal that everyone likes.

Slow Cooker BBQ Beef
Easy BBQ beef cooked all day for an easy meal any day of the week. Serve with roasted sweet potatoes and steamed broccoli on the side for a nutritious and filling meal.
Equipment
- Slow Cooker
Ingredients
- 2-3 lb chuck roast
- 2 tbsp BBQ Rub we like Trader Joe's
- 1 tbsp olive oil
- 1 onion, sliced
- 2 tbsp liquid smoke any flavor
- 1 mini Dr. Pepper, 7.5 oz
- salt and pepper
- BBQ sauce
Instructions
- Gather ingredients and set up the slow cooker. Drizzle just little bit of olive on the bottom.

- Cover the chuck roast with BBQ rub on both sides. Place in slow cooker. Surround with sliced onions, liquid smoke and Dr. Pepper.

- Cook for 6-8 hours on low. Shred the meat once cooked. Add salt and pepper as needed. Enjoy with BBQ sauce if desired.

Notes
- You can use the meat to make tacos or sandwiches but we like just plain with a some healthy sides.
- Store the leftover meat and all the juices to make a Beefy Pasta dish later in the week.
