Pumpkin French Toast

Pumpkin French Toast is one of our favorite ways to make a regular fall morning feel a little more special. The custard is filled with warm pumpkin flavor and cozy spices, soaking into thick slices of bread before being cooked until golden. It is soft on the inside with lightly crisp edges and smells amazing while it cooks. This is an easy breakfast that works just as well for slow weekends as it does for fall gatherings or holiday mornings. Served warm with butter and syrup, it is simple, comforting, and always a hit.

Pumpkin French Toast
Pumpkin French Toast is a cozy, autumn-inspired twist on classic French toast. Slices of bread are dipped in a rich, creamy mixture of pumpkin purée, cinnamon, nutmeg, vanilla, and a hint of sugar, then griddled to golden perfection. The result is a warm, slightly spiced breakfast treat with a soft, custardy center and crispy edges. Perfectly paired with maple syrup, whipped cream, or a sprinkle of powdered sugar for a delightful fall morning!
Equipment
- 1 griddle pan or large skillet
Ingredients
- 4 eggs
- 1/4 cup heavy cream
- 1/4 cup pumpkin
- 2 tbsp granulated sugar
- 1 tsp pumpkin pie spice
- 1 tsp vanilla
- 1 pinch salt
- 8 slices bread brioche, sourdough, or french
- 2 tbsp butter for the hot pan
- butter, powdered sugar and maple syrup for serving
Instructions
- Gather ingredients. Preheat the griddle pan on Medium.

- Mix all ingredients with a whisk until combined and the sugar is mostly dissolved.
- Turn the heat to medium-low and butter the hot surface.
- Dip the slices of bread one at a time into the mixture. I like to soak for a few seconds and then let as much drip off before placing on the hot pan.
- Cook about 2-3 minutes per side flipping the slices when browned and before they burn.
- Serve with butter, powdered sugar, and maple syrup.
Notes
If there is any left, you may store them in the refrigerator and warm them up in the toaster or microwave the next day. Enjoy!
