Spiced Roasted Carrots

On a work trip to San Diego, I had these incredible spiced roasted carrots which were sweet, caramelized, and full of warm flavor and topped with a garlic spread. I knew I had to recreate them at home for the family. It’s funny how a few small changes can turn basic roasted carrots into something really special. We call them “fancy carrots”.

Spiced Roasted Carrots
Equipment
- 1 baking sheet
Ingredients
- 6-8 large carrots, peeled and chopped into 1"-2" pieces
- 1 tbsp olive oil
- 1 tsp cinnamon
- 1 tsp cumin
- ½ tsp salt
For after baking
- 2 tbsp hot honey
- any chopped fresh herbs parsley, thyme, rosemary, (optional)
Garlic spread
- 1 tsp minced garlic
- 1 tbsp mayonaise
- 1 tbsp sour cream
Instructions
- Preheat oven to 450℉.
- Peel and chop carrots. Toss with olive oil, cinnamon, cumin and salt. Spread onto a baking sheet. Bake for 25 minutes.
- Make garlic spread or, alternatively, use a premade garlic spread. We love the Trader Joe's premade version.
- After 25 minutes, test the carrots for doneness by poking a fork into them. If too hard, add more time.
- When the carrots are cooked through and come out of the oven, drizzle them with the hot honey. Transfer to a serving dish and dollop with garlic spread. Sprinkle with fresh herbs on top and enjoy!
Notes
We have never had any leftovers but if you do, you can store in the fridge for up to a week.
